Cudjoe Pizza started as merely a day dream in cold and snowy Philadelphia in early 2023. After a 25 year career with the fire department, we moved our family down to Cudjoe Key. I have always loved baking, particularly pizza and focaccia, but having never worked in the culinary industry, let alone the food truck business, I was left with more questions than answers. Over the course of the next year, I immersed myself in research, tackled the permitting and licensure, became a certified food service manager, converted an old FedEx truck in to a solar-powered, wood-fired kitchen, and developed my recipes. Finally after many long hours I passed my inspections and in September 2024 realized my dream of opening a wood-fired pizza truck in the Florida Keys. Follow along as the journey continues.
